• Unique ergonomic handle design. It is the result of particular studies carried out at qualified University Institutes (a research unit called EPM: Ergonomics of Posture and Movement at the Milan Polytechnic) and validated by computerized experimental tests.
• The ergonomic shape guarantees a significant reduction in user fatigue.
• The handle is non-slip having a soft but slightly rough surface: you have greater safety in use.
• The material used is non-toxic and complies with European regulations. • The material used resists sudden changes in temperature (-40°C +150°C), corrosive agents and detergents.
• The knife is therefore dishwasher safe and sterilisable. in this way the most absolute hygiene is guaranteed.

USE
Each knife model is built for a specific use. Do not use the knife for other processes. Avoid contact of the blade with hard materials (ceramic, granite...).

CLEANING
Manual washing is performed with normal household detergents, taking care to remove all residues that easily remain on the blade near the handle. Particular attention must be paid to cleaning the knives after use with corrosive substances: oxidation is facilitated, for example, by the sodium chloride present in abundance in fish processing. In general, all organic liquids can become harmful if the contact is prolonged for many hours. The knife can be washed in the dishwasher, taking care to remove it as soon as the cycle is finished.

MAINTENANCE
Sharpening with a steel is recommended; if performed with grinding wheels, use specific abrasives with the use of coolant: tempering can cause loss of hardness and/or breakage.
